Weekend Cooking: More Zucchini

I only have a couple of zucchini plants this year, so I have been eating them as they mature and haven’t had to beg friends and neighbors to take them. But what to do with that giant zucchini that was hiding under the leaves? Make zucchini muffins or bread!

Zucchini Muffins

There are probably a zillion different zucchini bread recipes. I use the same recipe for muffins and bread. It’s easy to make and it stays nice and moist, even if you bake it a few minutes too long.

Ingredients

• 3 cups flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 3 teaspoons cinnamon
• 1/8 teaspoon nutmeg
• 1 teaspoon salt
• 2 cups white sugar
• 3 eggs
• 1 cup vegetable oil
• 3 teaspoons vanilla extract
• ½ cup chopped walnuts
• 2 cups grated zucchini

Preparation

Preheat oven to 350°F. Grease or spray muffin or loaf pans with non-stick cooking spray.

In a medium bowl combine flour, salt, baking soda, baking powder, cinnamon and nutmeg. In a large bowl beat eggs, oil, vanilla and sugar.

Add the flour mixture to the ingredients in the large bowl and mix well. Add the zucchini and walnuts and stir until combined.

Pour mixture into greased pans. Bake 40 to 60 minutes for loaf or 25 to 30 minutes for muffins. Cool in the pan for about 15 minutes then remove.

  4. I haven’t made zucchini bread or muffins in a long time I’ve been using my zucchini to make zucchini pasta which we love. Your muffin recipe looks simple and delicious- must try it. Visiting from Weekend Cooking

      Zucchini pasta sounds like an excellent idea. One of these days I will get the pasta making attachment for my stand mixer and give it a try.

    I beloved zucchini breadstuff and never persuasion of making muffins with my formula. I’ve never made zucchini breadstuff or muffins, but this sounds so serious that I might gift it a attempt.
