Weekend Cooking: Egg Salad with Tarragon

TarragonI have a large herb garden and this time of year they are at their peak. The more you pick them the better they grow.

A few years ago I added tarragon. It grew beautifully but I wasn’t sure what to do with it. After a little searching around I found a recipe for tarragon egg salad. It was delicious. Tarragon has a distinctive, aromatic flavor and enhanced the taste of the salad.

Egg Salad Sandwich• 6 large eggs
• 4 tablespoons mayonnaise
• 1 tablespoon freshly minced flat leaf parsley
• 1 tablespoon freshly minced french tarragon leaves
• 2 teaspoons dijon mustard
• ½ teaspoon salt
• 1 teaspoon celery seed
• freshly ground pepper to taste

Place eggs in medium sauce pan and cover with cold water. Bring water to a boil, turn off heat, cover and let cook for 12 minutes. Immediately cool eggs in cold or ice water to stop the cooking. Let sit a few minutes, then peel and chop eggs.

In a medium bowl mix together the tarragon, parsley, mustard, mayonaise, celery seed, salt and pepper. Stir in the eggs.

Recipe makes 4 sandwiches.

interesting. The only herb I’ve added to egg salad is fresh dill. I’ll have to try the tarragon, thanks!

It added a distinct flavor. If you like tarragon I’m sure you’ll enjoy this one.

I love egg salad, I love tarragon — this sounds like a combination made in heaven! I’ve used tarragon for a chicken salad I make.

I was surprised how good it tasted. Now I can’t eat ‘regular’ egg salad!

I love tarragon! At my old house, I used to have a huge tarragon plant in the garden. I miss it so much. Anyway, this recipe looks wonderful. Thanks for sharing.

So far the plant has returned for the third year. It’s hardy to zone 5 (which includes Chicago) but sometimes I lose them anyway.

I’m not a fan of egg salad, but my husband loves it. I’ll have to make this for him.

I make egg salad often but have never tried tarragon in it. I don’t have any growing so I’ll see if I can fiind some at the farmers market or the grocer. Great idea.

Freshly grown herbs add a lot to dishes. This looks and sounds delicious. 🙂

Sounds (and looks) delish, will try adding tarragon next time I make egg salad sandwiches.
Thanks for stopping by in Normandy.
    Have a great week.

I just posted an egg salad with tarragon recipe on my blog. Isn’t the addition of tarragon just wonderful? I also add curry powder on mine.
