Weekend Cooking: Pancakes

I usually eat fruit or something light for breakfast. But not today. It’s freezing cold, snowing and I want something a little more warm and comforting. So I turned to my favorite basic recipe for good old fashioned pancakes.

Ingredients

Old Fashioned Pancakes

• 1½ cups all-purpose flour

• 3 teaspoons baking powder

• 1 tablespoon white sugar

• 1 teaspoon salt

• 1 egg

• 3 tablespoons melted butter

• 1½ cups milk

• ½ teaspoon vanilla (optional)

Preparation:

Lightly beat the egg in a medium bowl. Add the milk and bring to room temperature. Add the melted butter and mix.

In a large bowl sift together flour, baking powder, sugar and salt. Add the combined egg, milk and butter to the large bowl and whisk until smooth.

Bring a lightly greased griddle to medium high heat. Cook pancakes until lightly browned on each side.

For thicker pancakes use ¼ cup less milk. For healthier pancakes use whole wheat flour. I use half whole wheat and half all-purpose flour.

Makes 4 servings.

    I’ve never tried making pancakes from scratch before. Do they really taste better than premade powdered batter?

      There’s a huge difference and worth the few extra minutes it takes to combine the real ingredients. The only box mix that I will eat was the Hungry Jack Buttermilk one where you add your own egg and milk. I couldn’t find it one time so I made them from scratch and never bought another mix.

    You just can’t go wrong with home made pancakes. Callista, you have to try making them and you’ll never want to go back to mixes again.

    Oh yummmmm. I haven’t had pancakes in while — they’re my husband’s specialty. We sometimes use half while wheat flour (King Arthur brand), which gives whole wheat flavor and goodness but with a lighter result.

    Oh and yes to Callista — homemade is much better.

    Yum I love hot pancakes with maple syrup and butter. I often make a batch of pikelets for my kids to take for school snack.
    From scratch is much better than the premade stuff
